Not every winemaking journey begins in a historic French château or an inherited family estate. Santolin Wines began with a bold leap of faith—and two people who decided to rewrite the rules of Yarra Valley winemaking. Today, this independent producer crafts some of Victoria’s most compelling, small-batch cool-climate Pinot Noirs.

The Leap of Faith: How Santolin Wines Began

In 2012, Adrian and Rebecca Santolin made a decision that would redefine their lives. They took the hard-earned money they had saved to buy their first home and instead invested it entirely in a single barrel, a fermentation tank, and two tonnes of premium Yarra Valley Pinot Noir grapes.

There was no grand family dynasty behind them, and no inherited vineyard handover. They had only passion, courage, and an unwavering belief that honest, small-batch winemaking could speak for itself. As Rebecca recalls: "We didn’t come from generations of winemakers. We were the first. We just knew we wanted to make wines we loved to drink."

Meet the Makers: Adrian & Rebecca Santolin

Adrian Santolin is the winemaking engine—hands-on, deeply curious, and quietly obsessive when it comes to cool-climate Pinot Noir. Growing up with an Italian heritage, Adrian worked on his grandparents' farm during school holidays, cementing his connection to the land. By his teens, he was working harvests at local wineries. Over the years, Adrian honed his craft at some of the Yarra Valley’s most legendary estates, including De Bortoli, Rochford, Wedgetail, and Rob Dolan.

Rebecca Santolin, a proud Kiwi native with an eye for design, runs the business side. Her focus on branding, marketing, and operations has elevated this tiny independent label into a multi-award-winning brand. Today, Santolin’s boutique Pinot Noirs are served in Qantas International Business Class and feature on the wine lists of Australia's finest dining rooms, including Attica and Vue de Monde.

Hands-Off, Soil-First: The Santolin Philosophy

Pinot Noir is famously referred to as the "heartbreak grape" due to its temperamental nature, but that difficulty is precisely what drives Adrian. His winemaking philosophy is centered on minimal intervention, allowing each vineyard site to tell its own story.

Adrian employs wild fermentations and avoids fining agents to preserve texture and weight. The wines are aged gently in a curated selection of new and seasoned French oak barrels. Bottling only occurs when the wine has achieved perfect balance. The result is a range of pure-fruited, site-specific Yarra Valley Pinots defined by structural elegance, savory complexity, and outstanding longevity.

Gruyere vs. Gladysdale: A Study in Sub-Regional Terroir

The Yarra Valley is a complex region with significant variations in altitude, temperature, and soil. Santolin showcases this beautifully through two distinct single-vineyard releases, representing the lower (warmer) and upper (cooler) Yarra subregions.

🍷 Santolin Gruyere Yarra Valley Pinot Noir 2021

Sourced from the warmer Gruyere subregion in the lower Yarra Valley. This Pinot is highly aromatic and lifted, exhibiting bright red cherry, pomegranate, floral notes, and delicate Chinese five-spice. The wild fermentation and French oak maturation yield fine, supple tannins and a highly approachable, silky texture.

🍷 Santolin Gladysdale Yarra Valley Pinot Noir 2021

Sourced from the cooler, high-altitude Gladysdale subregion in the Upper Yarra. The longer ripening period yields a more savory, structured Pinot Noir. Expect darker red berry fruit, wild forest floor notes, briar spice, and structural, fine-grained tannins. It is a precise, complex, and age-worthy wine built for cellaring.
