In exceptional vintages, Two Paddocks bottles a single-vineyard wine from one of its four organic sites; in 2021 that wine was The Last Chance — a two-hectare terrace perched in bright, clear air above the Earnscleugh Valley, among the world's most southerly vineyards. It takes its name from the watercourse hand-dug through its heart by gold miners in the 1860s. The nose bursts with wild strawberry, red currant, rosehip and citrus peel.

Picked on 8 April 2021 and sorted in the vineyard (86% clone 115, 14% clone 5), the fruit saw a 79% whole-bunch ferment in a French oak cuve with a seven-day cold soak and indigenous yeast, then twenty-four days on skins. The wine matured eleven months in medium- and light-toast French barriques (11% new); only 200 cases were made. Raw schist gravels give a savoury, mineral palate — mushroom and wet leaves, with brilliance, clarity and poise.

One of the world's southernmost single-vineyard Pinots, from raw schist and gold-miners' history. Savoury, mineral and taut, it is built for the cellar but already thrilling — a benchmark for site-driven Central Otago.
