L&C Poitout is the family domaine of Louis and Catherine Poitout, based at Fleys in Chablis. Louis — whose father also worked in the region — struck out on his own in 2013, and with Catherine (born into the Gautheron winemaking family) built an estate of around 18 hectares, farmed sustainably and vinified plot by plot.

Though best known for precise, mineral, terroir-focused Chablis, the Poitouts also craft red Burgundy: their 'Vindemiola' Bourgogne Pinot Noir shows the same clean, freshness-driven hand — bright, food-friendly and true to place. A modern, quality-conscious Burgundy address to watch.
